Pancetta, Lettuce & Tomato on Toasted Whole Wheat

  1. Preheat grill on HIGH 10 min. Preheat cast-iron griddle or large sauté pan on grill. Add pancetta and cook, about 3 min, until brown and crisp. Remove from griddle and keep warm. Pour off and discard excess fat.
     
  2. Brush one side of each bread slice with basting oil; place, oiled side down, on griddle. Toast, 2-3 min, until lightly browned.
     
  3. Spread mayonnaise on untoasted side of bread. Layer with pancetta, lettuce, and tomato. Top with remaining bread to complete sandwiches.
