Directions

  1. Make dressing: Zest one orange, then juice it. Whisk juice and zest together in small bowl with grated ginger and mint. Whisk in olive oil, pouring oil in a steady stream as you whisk. Season with salt and pepper.
     
  2. Remove peel and pith from other 2 oranges. Slice oranges into wheels; set aside.
     
  3. Toss melon cubes in half the dressing.
     
  4. Place fennel slices in large bowl; add greens and remaining half of dressing. Toss; season with salt and pepper.
     
  5. Portion onto six plates; top with melon, cheese, and orange wheels. Garnish with reserved mint leaves; season with pepper.
Chef Tips
  • Use a microplaner to easily zest the orange.
  • Top with skewer of grilled scallops.
