  1. Add mushrooms to large pot of boiling, salted water. Blanch 1 1/2 min; drain. Transfer to bowl of ice water. Drain; gently squeeze dry on paper towel. 
     
  2. Add mushrooms, chicken, pepper, cucumber, chili, green onions, tomato, herbs, shallot, sauce, and lime juice to large bowl; toss to combine. Serve chilled.
