  1. Remove tails from shrimp; halve lengthwise. Set aside.
     
  2. Bring water to a boil. Add noodles to large bowl; carefully pour boiling water over noodles. Let stand 5 min; drain and rinse. Gently squeeze excess water from noodles. Cut noodles in half; set aside.
     
  3. Add shrimp, noodles, lime juice, sauce, cucumber, pepper, shallot, green onions, cilantro, and mint to large bowl. Season with salt; toss to combine. Cover; chill and marinate shrimp-noodle mixture at least 1 hour.
     
  4. Arrange tomato slices around rim of serving platter; mound shrimp-noodle mixture in center.
Chef Tips
For enhanced flavor, add Food You Feel Good About Tom Tom Sauce or Food You Feel Good About Spicy Green Sriracha Sauce.
