Poblano Corn Relish

  1. Preheat grill on HIGH. Coat cleaned grill grate lightly with vegetable oil; reduce heat to MED. Drizzle corn with basting oil; grill, 6-8 min, turning often, until lightly browned. Let cool; carefully cut kernels from cobs.
     
  2. Add corn, Poblano peppers, onions, lime juice, cilantro, jalapeno slices, and pickling juice to large bowl; toss to combine. Season with salt and pepper. Cover; chill at least 20 min before serving.
Chef Tips
  • If fresh corn is not available, replace with 1 (12 oz) bag Food You Feel Good About Just Picked Super-Sweet Corn (Frozen Foods). Toss corn with 1 Tbsp Food You Feel Good About Basting Oil and add to parchment paper-lined baking sheet. Roast in 450 degree oven for 10-12 min until lightly browned.
  • For more heat, increase the amount of jalapeno slices used.
