  1. Arrange iceberg wedges on small plates; top with onion and radishes.
     
  2. Drizzle each wedge with blue cheese dressing. Sprinkle with chunks of blue cheese; garnish with chopped chives.
Chef Tips
  • Leave a little root on radish if slicing on mandoline.
  • To easily core and clean iceberg: Slam lettuce, core side down, on work surface to release the core. Pull core out, trim off outer leaves. Hold lettuce under spigot (core arc-up), like filling a bowl. Fill and empty twice. Allow to drain on drain board.
