  1. Dust chicken with gluten-free pan-searing flour; pat off excess. Heat olive oil in pan on MED-HIGH until oil faintly smokes; add chicken. Turn over when chicken changes color one-quarter of way up and seared side has browned, 3-4 min.
  2. Reduce heat to MED; cook chicken 12-15 min, until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken). Transfer to cutting board; let rest 5-10 min. Shred chicken; set aside.
  3. Add mushrooms to large pot of boiling, salted water. Blanch 1 1/2 min; drain. Transfer to bowl of ice water. Drain; gently squeeze dry on paper towel. 
  4. Add mushrooms, chicken, pepper, cucumber, chili, green onions, tomato, herbs, shallot, sauce, and lime juice to large bowl; toss to combine. Serve chilled.
