  1. Peel and section 4 clementines, removing as much pith (white membrane beneath peel) as possible. Set aside. 
      
  2. Juice remaining clementines into bowl. Add olive oil; season with salt and pepper. Whisk to combine. Chill until ready to use.
     
  3. Toss spring mix with dressing; arrange on serving platter. Top with clementine segments and pomegranate arils; garnish with Fleur de Sel.
