  1. Preheat grill on MED-HIGH 10 min. Coat cleaned grill grate lightly with vegetable oil.
     
  2. Sear chicken on grill 2-3 min, until it has changed color one-quarter of the way up from bottom. Turn over; sear 2-3 min. Reduce heat to MED; close lid.
     
  3. Cook chicken 8-10 min, or until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken). Transfer chicken to clean platter; let rest.
     
  4. Toss together celery, carrots, radishes, shallots, blue cheese, and dressing in a large bowl. Set aside.
     
  5. Slice chicken; toss with wing sauce. Set aside.
     
  6. Center lettuce on serving plates; top with blue cheese and chicken mixtures.
