  1. Make dressing: Whisk together vinegar and 1 Tbsp olive oil in small bowl until well-blended.
     
  2. Toss greens with dressing in large bowl; season with salt and pepper. Portion onto six plates; top with prosciutto, figs, and cheese. Drizzle with remaining Tbsp olive oil.
