  1. Make mushroom ragu: Cook leeks in oil in large skillet on HIGH 1 min; stir in baby bella, shiitake, and trumpet mushrooms, and garlic. Cook, stirring, 3 min. Stir in maitake mushrooms; cook 2 min. Stir in thyme.
  2. Add wine, stirring to loosen browned bits on bottom of pan. Cook about 4 min to reduce by half.
  3. Add chicken stock and creme fraiche. Season with salt and pepper. Bring to boil; remove from heat immediately. Add parsley.
  4. Prepare lasagna: Blanch a few won ton wrappers at a time 30 seconds in large pot of boiling, salted water. Transfer to bowl of cold water to keep wrappers pliable.
  5. Assemble lasagna: Place 1 won ton wrapper on serving plate; top with about 1/3 cup mushroom ragu. Top with 1 wrapper and another 1/3 cup of ragu. Top with last wrapper. Drizzle with truffle oil; sprinkle with chives and grated cheese.
