  1. Preheat oven to 350 degrees. Pour vegetable oil in large braising pan on HIGH; add bacon and cook 4-6 min. Reduce heat to MED-HIGH; add mirepoix. Cook, stirring frequently, 3-5 min.
     
  2. Add butter; stir 3-5 min. Add apples; cook 5 min.
     
  3. Add chicken stock and bring to simmer, 5-8 min.
     
  4. Mix in croutons, stirring frequently until moist. Stir in pecans and pepper; cook 2-3 min.
     
  5. Remove pan from heat. Place turkey thighs (skin-side down) on top of stuffing. Place in oven; cook uncovered 30 min. Turn thighs over; cook until internal temp reaches 165 degrees, approximately 20 min per lb.
     
  6. Remove thighs; carefully drain fat off stuffing. Return stuffing to oven; cook uncovered, 15-20 min more.
     
  7. Slice thighs; arrange on platter. Serve with stuffing.
