Veal with Morel Marsala Sauce

  1. Soak mushrooms in water 30-60 min. Strain mushrooms from soaking liquid; reserve liquid. Halve mushrooms lengthwise; return to liquid. Set aside.
     
  2. Season both side of veal with salt. Dust with pan-searing flour; pat off excess. Heat 1 Tbsp oil in braising pan on MED-HIGH until oil faintly smokes. Add 4 pieces veal; sear, about 30 sec, until slightly browned. Turn over; cook about 30 sec. Transfer to large serving platter. Repeat process with remaining oil and veal. Reserve pan drippings in pan.
     
  3. Reduce heat to MED; add shallots to pan. Cook, stirring, 1 min. Carefully add mushrooms and soaking liquid (discard any sediment). Add Marsala; increase heat to HIGH. Cook, stirring occasionally, 5-10 min until almost all liquid is reduced. Stir in heavy cream and demi-glace; bring to boil.
     
  4. Reduce heat to MED. Simmer, stirring occasionally, 3-5 min until slightly thickened. Season with salt and pepper; pour evenly over veal.
