  1. Preheat oven to 350 degrees. Dust shanks with pan-searing flour. Heat oil on MED in large braising pan. Brown shanks on all sides, 8-10 min. Remove shanks; set aside. Discard all but 1 Tbsp pan drippings.
     
  2. Add mirepoix and herbes; cook 4-5 min. Add garlic; cook, stirring occasionally, 8-10 min. Add wine, lemon zest and juice; cook 5-8 min, until reduced by one-third. Add stock; season with salt and pepper. Return shanks to pan; heat to simmer.
     
  3. Cover and place on center rack of oven. Braise 2 hours. Carefully remove lid. Add beans and olives; stir. Cook, uncovered, about 30 min, until shanks are fork-tender.
     
  4. Transfer shanks to serving platter. Stir parsley into sauce. Pour sauce over shanks; serve.
