For best results, a 9-inch glass pie pan is recommended

Directions

  1. Preheat oven to 425 degrees. Heat oil in stockpot on MED-HIGH until oil faintly smokes. Add celery, onions and baby carrots; cook, stirring, 3-5 min. Add chicken broth; cook about 8 min until vegetables are tender.
     
  2. Add turkey, gravy, peas and herbes; season with salt and pepper. Cook about 5 min until peas are thawed. Remove from heat.
     
  3. Pour mixture into 9-inch glass pie pan; top with 1 pie crust. Crimp edges onto sides of pan, forming seal. Beat together egg and water; brush edges with egg mixture using pastry brush.
     
  4. Place pie on baking sheet. Bake on center rack 20-25 min until crust is golden brown. Rest pie 10 min before serving.

This pot pie is meant to be served family style and scooped out of the pie pan. It may be soupier than other pot pies.
