Tortiglioni & Chicken with Vegetables

  1. Heat olive oil in large pan on MED-HIGH, until oil faintly smokes; add chicken. Turn over when chicken changes color one-quarter of way up and seared side has turned paper-bag brown, 3-4 min. Reduce heat to MED; cook chicken about 10 min, until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken).
     
  2. Add basting oil and butter to pan; swirl. Baste with spoon, 1-3 min. Transfer to clean platter.
     
  3. Add peppers to pan. Cook, stirring, 3-4 min, until lightly browned. Add zucchini; cook, stirring, 2-3 min, until browned. Season with salt.
     
  4. Add wine and simmer on HIGH, 3-4 min, until reduced by half. Season with pepper.
     
  5. Add red pepper sauce; simmer 2-4 min, until veggies are tender. Add pasta and peas, stirring gently to warm through. Top with sliced chicken and cheese.
