  1. Bring large pot of water to boil on HIGH. Reduce heat; bring to simmer. Add chicken; blanch 2 min. Drain well on paper towels.
     
  2. Add oil and red curry paste to stir-fry pan on MED. Cook, stirring, about 1 min, until aromatic. Add simmer sauce; bring to simmer on MED-HIGH. Reduce heat to LOW; stir in coconut milk, fish sauce, and sugar.
     
  3. Add chicken, peppers, and mushrooms; simmer 1 min. Add bok choy; stir to combine. Cook about 1 min until bok choy wilts.
     
  4. Turn off heat; stir in lime juice and 10 basil leaves. Garnish with remaining basil leaves and lime wedges.
