Szechuan Chicken, Green Beans & Mushrooms

  1. Blanch green beans in pot of boiling, salted water 3-4 min. Drain; set aside.
     
  2. Heat 1 Tbsp olive oil in stir-fry pan on HIGH. Add mushrooms; season with salt and pepper. Cook, stirring, 3 min.
     
  3. Add garlic, remaining olive oil, and chili paste to pan on MED; cook, stirring, 2-3 min. Remove; transfer to serving bowl with green beans.
     
  4. Add soy sauce, sesame oil, and agave to mushrooms and green beans; mix to combine. Fold in green onions, Fresno chili and chicken.
Chef Tips
  • Can be made one day ahead.
  • Serve in grilled pita for a tasty sandwich.
  • Instead of chicken, try shredded pork or beef.
