  1. Whisk honey and vinegar together in small bowl; set aside.
     
  2. Add sweet potato flakes to shallow bowl. Place fillets (one at a time) in mixture. Coat well by pressing potato flakes onto fillets.
     
  3. Heat oil in pan on MED-HIGH until oil faintly smokes; add fillets. Cook 5 min. Turn over.  
     
  4. Reduce heat to MED; cook, 3-4 min, until internal temp of fillets reaches 130 degrees (check by inserting thermometer halfway into thickest part of fillet). Transfer to serving platter; let rest 2 min.
     
  5. Top each fillet with about 1 1/2 Tbsp honey-vinegar mixture and chives. Season with salt and pepper.
