Directions

  1. Preheat oven to 350 degrees. Cut tops of peppers about 1/2-inch from top; discard stems and seeds. Dice reserved tops; add to large bowl. Set aside remaining peppers.
     
  2. Add cauliflower, mirepoix, beef, eggs, parsley, salt, and pepper to bowl with diced peppers. Mix well to combine.
     
  3. Fill peppers evenly with veggie-beef mixture. Add sauce to 13x9-inch baking dish; set peppers in dish. Cover with parchment paper and aluminum foil.
     
  4. Bake about 1 hr 15 min until internal temp of veggie-beef mixture reaches 165 degrees (check by inserting thermometer halfway into center of mixture).
