Steamer basket


  1. Season each fillet with salt and pepper and 1 tsp of basting oil. Chill 10 min.
  2. Layer bottom of steamer basket with fish.
  3. Heat 1 inch of water in large, heavy pan on HIGH to rapid boil. Water must be hot enough to create steam below food, but must not touch it. Place basket in pan; cover with tight-fitting lid. Steam 7-8 min or until fish has reached internal temp of 130 degrees. To check temp, lift lid away from face (use extreme caution and avoid steam) and insert thermometer into thickest part of fish.
  4. Remove from heat, using extreme caution. Transfer to clean serving platter; let rest at least 2 min. Drizzle with curry sauce.
