  1. Make Bean Sauce: Combine stock, beans, mirepoix, black bean sauce, and chili garlic sauce in saucepan. Simmer rapidly on MEDIUM-HIGH, stirring occasionally, 10-12 min.
  2. Layer broccoli florets on bottom of two steamer baskets; top with clams. Stack baskets and cover.
  3. Heat 1-inch water in wok or tegame pan on HIGH to rapid boil. Water must be hot enough to create steam below food, but must not touch it.
  4. Place layered baskets in pan. Steam 16-18 min, until clams open.
  5. Remove from heat; using extreme caution, remove lid carefully away from your face, avoiding steam. Discard any clams that did not open. Transfer to serving plate and top with bean sauce.
