Braising Pan


  1. Heat oil in braising pan on MED. Add celery and onions, leeks, garlic, and bay leaves; season with salt and pepper. Cook, stirring, 10 min, until soft but not browned.
  2. Add mussels and simmer sauce to pan; increase heat to MED-HIGH. Cook, covered, until simmering and mussels open, 3-5 min. 
  3. Remove lid; stir. (Discard any mussels that do not open.)

Serve with sliced Ciabatta Baguette.
