  1. Preheat oven to 450 degrees. Brush eggplant with 3 Tbsp basting oil. Arrange in single layer on parchment paper-lined baking sheet. Roast, 10 min; turn and roast 10 min longer. Remove from oven and blot any excess moisture from eggplant with paper towel. Season to taste with salt and pepper; set aside.
     
  2. Brush cut surfaces of bread with remaining 2 Tbsp basting oil. Place in oven and toast for 5 min. Remove from oven, set aside. Turn oven to BROIL.
     
  3. Heat sofrito in small saucepan on LOW, until warmed through, 3-4 min, stirring occasionally.
     
  4. Spread sofrito evenly over top and bottom halves of bread, then layer bottom half with eggplant, spinach and cheese. Place in oven and broil until cheese melts, about 3 min, watching carefully. Remove from oven, add top to sandwich, and cut into quarters.
