You'll Need

Braising pan


  1. Preheat oven to 400 degrees. Add basting oil to braising pan on MEDIUM-HIGH. Add sausage to pan. Sear, about 2 min, until browned. Remove from pan and set aside.
  2. Add mirepoix to pan; cook, stirring, 3-4 min, until mirepoix begins to soften. Add barbecue seasoning; stir. Add rice blend; cook, stirring, 2-3 min, to toast rice. Add tomatoes and water, breaking up tomatoes as they cook.
  3. Return andouille to pan. Bring to a simmer on HIGH; cover. Transfer pan to oven; cook 20 min.
  4. Remove from oven. Carefully remove lid, avoiding steam.  Layer chicken on rice. Cover; return pan to oven. Cook 5 min.
  5. Remove from oven; let rest 10 min. Before serving, fold chicken into rice.
