Directions

  1. Day before: Diagonally score top and bottom of pork about 3/4 inch deep in a diamond pattern. Combine BBQ seasoning, sazon, and sofrito in small bowl. Coat pork well with sauce (wear gloves). Cover well with plastic wrap; refrigerate overnight. 
     
  2. Day you're serving: Preheat oven to 275 degrees. Remove plastic wrap; transfer pork to shallow roasting pan. Bake, uncovered, 7-8 hours. Pull apart meat with tongs or slice for serving.
