Directions

  1. Season lamb with pepper; dust lamb with pan-searing flour. Pat off excess.
     
  2. Heat oil in large braising pan on MED-HIGH until oil faintly smokes; add lamb, and brown both sides, 5-6 min. Transfer to slow-cooker. Discard all but 1 Tbsp drippings from pan.
     
  3. Reduce heat to MED. Add mirepoix, cook, stirring occasionally, 3-4 min until tender. Add coarsely chopped garlic; cook until lightly browned, about 2 min.
     
  4. Add wine to braising pan, stirring to loosen browned bits on bottom of pan. Simmer, stirring occasionally, until almost dry, about 8 min. Add broth, tomatoes, olives, herbes, and capers; transfer to slow cooker.
     
  5. Cover and cook on HIGH 4-6 hours or LOW 6-8 hours. Remove lid carefully. Transfer lamb to platter. Skim fat from surface of sauce and discard. Cover lamb with sauce.
     
  6. Make gremolata: Chop together parsley, lemon zest, and minced garlic until very fine. Serve a pinch of gremolata over each serving of lamb.
