6-8 qt slow cooker

Directions

  1. Dust roast with pan-searing flour; pat off excess. Heat oil in large braising pan on MED-HIGH, until oil faintly smokes.
     
  2. Add roast, turning to brown all sides, about 2 min per side. Remove roast; place in slow cooker. Discard all but 1 Tbsp drippings from pan.
     
  3. Add mirepoix and garlic to pan; cook, stirring, 2 min. Add wine, stirring to loosen browned bits on bottom of pan. Cook 2 min, until liquid is reduced by one-third to syrupy consistency. Add stock; bring to simmer.
      
  4. Pour stock mixture over meat in cooker. Add tomatoes, sauce, and rosemary; stir to mix slightly.
     
  5. Cover; cook 4-5 hours on HIGH or 6-8 hours on LOW. Transfer chuck roast to serving platter. Season with salt and pepper. Pour sauce over chuck roast and serve.
