6-8 qt slow cooker

Directions

  1. Dust chicken with pan-searing flour; pat off excess.
     
  2. Heat oil in large skillet on MED; add chicken. Brown lightly on all sides, 8-10 min total. Remove chicken; place in slow cooker.  Discard all but 1 Tbsp oil.
     
  3. Add shallots; cook, stirring, 1-2 min. Add mushrooms; cook, stirring, 3-4 min. Stir in remaining 3 Tbsp pan searing flour.  Add wine and chicken stock; bring to simmer, stirring until thickened.
     
  4. Add potatoes to slow cooker. Pour wine-stock mixture over chicken and potatoes.   
     
  5. Cover; cook 3-3 1/2 hours on HIGH or 6-6 1/2 hours on LOW. 
     
  6. Adjust cooker to HIGH; add escarole. Pull chicken to top; cook about 45 min or until escarole is tender.  Stir in tarragon, peppers, and capers.  Add lemon juice; season with salt and pepper.
