6-8 qt slow cooker

Directions

  1. Dust shanks with pan-searing flour. Heat oil on MED in large braising pan. Brown shanks lightly on all sides, 8-10 min. Remove shanks; place in cooker. Discard all but 1 Tbsp oil.
     
  2. Add mirepoix; cook 4-5 min; stirring frequently. Lower heat to MED-LOW. Add garlic; cook 5-8 min, stirring occasionally, stir in all-purpose flour.
     
  3. Add wine; reduce to syrupy consistency 3-5 min, stirring occasionally. Add stock; bring to simmer.
     
  4. Pour stock mixture over meat in cooker. Add mushrooms, tomatoes, and herbes; stir until mixed.
     
  5. Cover, cook for 4-5 hours on HIGH or 8-10 hours on LOW. Transfer shanks to serving platter. Season with salt and pepper. Pour sauce over shanks.
