16 grilling skewers (if bamboo, soak 1 hour before use)

Directions

  1. Preheat grill on HIGH 10 min. Puree pineapple salsa in food processor or blender; set aside.
     
  2. Coat cleaned grill grate lightly with vegetable oil.
     
  3. Arrange about 4 shrimp on each skewer. Season with salt and pepper; drizzle with basting oil (too much oil will cause flare-ups on grill).
     
  4. Grill, 3-4 min on each side, until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of shrimp). Remove from grill; let rest at least 2 min before serving.
     
  5. Drizzle basting oil lightly over each tortilla; grill 30 seconds, until just slightly browned. Turn; grill second side.
     
  6. Layer each grilled tortilla with slaw, tomatoes, cucumber, avocado, and cheese. Top with grilled shrimp and pureed salsa.
