  1. Preheat oven to 400 degrees. Add tofu and 1 Tbsp oil to large bowl; toss to combine. Arrange tofu in single layer on parchment paper-lined baking sheet. 
     
  2. Roast, 12-15 min, until tofu begins to puff. Remove from oven; set aside.
      
  3. Heat remaining oil in stir-fry pan on MED, until oil faintly smokes. Add peppers and white onions; cook, stirring occasionally, 4 min. Add garlic and ginger; cook, stirring, about 30 sec. Add tofu and sauce; stir to combine. Remove from heat; set aside.
     
  4. Blanch bok choy 2 min in pot of boiling, salted water. Drain; transfer to clean platter. Top with tofu mixture; garnish with sesame seeds and green onions.
