Large braising pan

Directions

  1. Preheat oven to 450 degrees. Toss yams, potatoes, Brussels sprouts, and basting oil in large bowl; season with salt and pepper. Set aside.
     
  2. Heat olive oil in braising pan on MEDIUM-HIGH. Add sausage; sear both sides, 4 min.
      
  3. Remove sausage from pan; set aside.
     
  4. Add yam mixture to pan; cook, stirring, 2 min. Transfer pan with vegetables to oven. Roast, uncovered, 15 min.
     
  5. Top yam mixture with sausage; roast, about 15 min, until internal temp of sausage reaches 160 degrees and veggies are fork-tender.

Use a spatula and tongs to turn rope sausage.
