  1. Preheat oven to 450 degrees. Toss yams, potatoes, Brussels sprouts, and basting oil in large bowl; season with salt and pepper. Set aside.
  2. Dust ribs with pan-searing flour. Heat olive oil in braising pan on MEDIUM-HIGH. Add ribs; sear 2 min. Turn over; sear 2 min.
  3. Remove ribs from pan; set aside. Add vegetables to pan; cook, stirring, 2 min.
  4. Transfer pan with vegetables to oven; roast, 15 min. Top veggies with seared ribs; roast, 20-25 min, until pork reaches internal temp of 145 degrees and vegetables are tender. Check internal temperature by inserting thermometer halfway into thickest part of meat. Remove from oven; let rest 5-10 min.
  5. Serve with chimichurri sauce.
Serve with Wegmans Savory Finishing Sauce (Grocery Dept) instead of the chimichurri sauce.
