  1. Preheat oven to 450 degrees. Toss onion, fennel, 1 Tbsp olive oil and 1/2 Tbsp thyme in large bowl; season with salt and pepper. Place on bottom of roasting pan.
     
  2. Rinse pork loin; pat dry. Rub with remaining olive oil and thyme. Season with salt and pepper; place on top of fennel-onion mixture.
     
  3. Cook 20 min; reduce heat to 325 degrees and continue to cook until internal temperature reaches 145 degrees, about 20 min per lb. Check internal temperature by inserting thermometer halfway into thickest part of meat.
     
  4. Remove from oven; let rest 20 min. Slice; arrange on platter with fennel-onion mixture; serve.
