Preheat oven to 450 degrees.

  1. Rub rib roast with 1/4 cup basting oil; coat thoroughly with cracked pepper blend. Place in roasting pan, rack optional. Sear on center rack of oven 15 min.
     
  2. Reduce heat to 350 degrees. Roast 15-20 min per lb, until desired doneness.
     
  3. With 30 min of roasting time left, mix together mushrooms and remaining 1 Tbsp basting oil in small bowl. Season to taste with salt and pepper. Carefully add to roasting pan liquid.
     
  4. Check roast internal temp by inserting thermometer halfway into thickest part of meat; remove from oven when desired temp is reached. (Refer to temp chart for final cooking temps.) Transfer roast to clean platter. Let rest 20-30 min before carving.
     
  5. While meat rests, carefully remove fat from roasting pan liquids. Add demi glace to pan juices. Bring to simmer on stovetop on MEDIUM-HIGH, about 5 min.
     
  6. Serve roast with demi glace.
