  1. Whisk honey and vinegar together in small bowl; set aside.
     
  2. Season chicken with salt and pepper. Put potato flakes in shallow bowl. Place one chicken breast at a time in bowl, coating well by pressing potato flakes onto both sides.
     
  3. Heat 2 Tbsp olive oil in large nonstick skillet on MED. Place 2 chicken breasts in pan; cook 4-5 min, until color changes 3/4 of way up. Turn over; cook 8-10 min until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of meat).
     
  4. Transfer to clean serving platter; keep warm. Repeat with remaining chicken.
     
  5. Top each piece chicken with about 1 1/2 Tbsp honey-vinegar mixture and chives.
