12-inch cast-iron skillet, aluminum foil

Directions

  1. Preheat 12-inch cast-iron skillet on MED. Toast tortillas 10 sec on each side. Wrap tortillas in foil to keep warm; set aside.
     
  2. Heat oil in skillet on MED-HIGH. Add mushrooms; press down in skillet using spatula. Cook 5 min; turn over. Press down again; cook 5 min. Season with salt and pepper.
     
  3. Turn off heat; let skillet cool slightly 1-2 min. Add 1/2 cup salsa and lime juice; stir to combine. 
     
  4. Divide mushroom mixture evenly among tortillas; garnish with your choice of toppings.
Chef Tips
  • Try replacing crème fraiche with lime crema: Add 1 (8 oz) container sour cream, 1 Tbsp lime juice, and 1/2 tsp salt to bowl; whisk to combine. Chill until ready to use.  
  • Press mushrooms with the back of a spoon while cooking to break into smaller shreds.
