Pork & Veal Ragu with Mushrooms

Ingredients

Directions

  1. Blanch broccoli and cauliflower 3-4 min in large pot of boiling, salted water. Drain. Transfer to bowl of ice water; drain and set aside. Keep warm.
     
  2. Dust pork and veal with pan-searing flour; pat off excess.
     
  3. Heat oil in large braising pan on MED-HIGH until oil faintly smokes; add veal and pork. Brown about 4-5 min, turning to brown all sides. Remove from pan; set aside.
     
  4. Reduce heat to MED. Add shallot; cook 1 min, stirring. Add mushrooms; cook 1-2 min, browning slightly.
     
  5. Add wine; simmer 3-4 min to reduce to about 3 Tbsp. Stir in demi-glace and creme fraiche; return meat to pan. Heat to simmering. Season with salt and pepper.
     
  6. Serve on noodles with warmed vegetables.
Chef Tips
Sour cream can be used in place of crème fraiche.
