Directions

  1. Preheat oven to 450 degrees. Place stew vegetables in shallow baking dish. Toss with 3 Tbsp olive oil, salt and pepper. Roast 20 min.
     
  2. Season pork with salt and pepper. Rub with mustard, herbes, and bread crumbs until well coated.
     
  3. Place pork on top of vegetables and drizzle with remaining olive oil. Roast 15 min.
     
  4. Remove pan from oven; turn pork over and stir vegetables. Reduce oven temp to 350 degrees. Continue cooking until internal temperature reaches 145 degrees, about 20 min per lb (check internal temperature by inserting thermometer halfway into thickest part of meat).
     
  5. Remove from oven; let rest 15 min. Serve with vegetables.
