  1. Cut chilled roast into 1 1/2-inch slices; do not trim off fat. 
  2. Heat oil in large skillet on HIGH. Sear pork in batches, being careful not to crowd pan, about 3 min per side, until crispy. (Caution: Watch out for spattering oil as pork sears.) Remove from pan. Keep each batch warm as you sear rest of pork.
  3. Slice or pull apart pork into bite-size pieces. Place in bowl.
  4. Using tongs, toast tortillas carefully over open flame or place in hot skillet until they just begin to brown.
  5. Set out taco toppings.
