  1. Cut pork shoulder into thirds. Add to stockpot with water. Add bay leaves, garlic, chiles, onion, oregano, and salt. Bring to low boil. Cover; cook until tender, about 2 hours.
  2. Remove pork and chiles from cooking liquid; transfer to clean surface. 
  3. Puree salsa and chiles in blender until smooth, about 1 min. Add puree and hominy to stockpot with cooking liquid.  Bring to simmer; cook 5 min.
  4. Break pork into bite-size pieces while hominy simmers. Discard excess fat and any bone. Add pork to stockpot; cook 5 min. Season with salt and pepper. Ladle into bowls; top with garnishes as desired.
