Directions

  1. Dust pork chops with pan-searing flour; pat off excess. Heat olive oil in skillet on MED-HIGH until oil faintly smokes; add pork chops. Turn over when pork changes color one-quarter of way up and seared side has turned paper bag-brown.
     
  2. Reduce heat to MED. Cook 3-5 min, until internal temp reaches 140 degrees (check by inserting thermometer halfway into thickest part of meat).
     
  3. Add basting oil and butter to skillet; swirl. Baste with spoon 1-3 min until internal temp reaches 145 degrees. Transfer to clean cutting surface; let rest 5-10 min while rest of dish is prepared.
     
  4. Place prepared noodles in large bowl with green onions and citrus soy sauce.
     
  5. Slice pork chops in half. Arrange noodles on serving plates; top with pork.
