Preheat oven to 350 degrees.
  1. Soak mushrooms in 1 cup warm water 30-60 min.
     
  2. Dust chops with pan-searing flour; pat off excess.
     
  3. Heat large ovenproof skillet on MEDIUM-HIGH. Add just enough olive oil to coat bottom of pan and heat until oil faintly smokes. Carefully place chops in pan. Turn over when pork changes color one-quarter of way up from bottom and seared side has turned paper-bag brown 3-5 min.
  4. Top each chop with 1/4 Tbsp butter; drizzle with basting oil. Place skillet with chops in oven and bake 15-20 min, until internal temperature reaches 145 degrees. Check internal temperature by inserting thermometer halfway into thickest part of meat. Remove from oven; let rest 5-10 min.
     
  5. As chops cook, manually squeeze water from mushrooms, saving liquid. Slice mushrooms in half lengthwise. Set aside.
     
  6. Heat 1 tsp butter in medium skillet on MEDIUM-HIGH. Stir in shallots and mushroom. Add wine and reserved mushroom liquid; simmer 10-15 min until almost dry. Stir in demi glace and quark; heat to simmering. Add remaining 1 tsp butter. Serve sauce over chops.
