Preheat oven to 350 degrees.
  1. Dust steaks with pan-searing flour, patting off excess.
  2. Heat oil in ovenproof skillet on MEDIUM-HIGH, until it faintly smokes. Place steaks in pan; brown both sides well, 2-3 min per side.
  3. Place entire pan in oven and cook until desired doneness is reached. (Refer to temp chart for final cooking temps). Check by inserting thermometer halfway into thickest part of meat.
  4. Add finishing butter to pan. Melt and blend, but do not burn butter. Baste meat about 30 seconds with butter. Transfer steaks to clean platter; let rest 5-10 min.
