Preheat oven to 350 degrees.
  1. Dust steaks with pan-searing flour.
  2. Heat olive oil in oven-safe pan on MEDIUM-HIGH on stovetop until oil faintly smokes; carefully add steaks. Turn steaks over when caramelized (edges turn paper-bag brown about 1/4 way up sides), 3-4 min.
  3. Place pan with steaks in oven immediately after turning meat. Cook steaks until desired internal temperature is reached (refer to chart below). Check temperature by inserting thermometer into thickest part of meat.
  4. Remove steaks from pan when desired temperature is reached. Pour Marsala Sauce into pan, stir to deglaze; cook until heated through, 3-5 min. Serve sauce with steaks.
