  1. Preheat oven to 350 degrees. Combine bread crumbs, cheese, and cracked pepper blend in food processor; pulse until blended. Set aside.
     
  2. Dust steaks with pan-searing flour; pat off excess. Heat olive oil in oven-safe saute pan on MED-HIGH on stovetop until oil faintly smokes; add steaks. Turn over when steaks change color one-quarter of way up and seared side has browned, 4-5 min. Sprinkle with bread crumb mixture.
     
  3. Place pan with steaks in oven. Cook until internal temp reaches 120 degrees for rare, 130 for medium (check by inserting thermometer halfway into thickest part of steaks). Remove from oven; let rest 10 min.
     
  4. Cut steaks in half; top with mushroom sauce.
