  1. Preheat oven to 350 degrees. Dust steaks with pan-searing flour, patting off excess.
  2. Heat oil in ovenproof skillet on MED-HIGH, until it faintly smokes. Place steaks in pan; brown both sides well, 2-3 min per side.
  3. Place entire pan in oven and cook until desired doneness; remove from oven. Add butter to pan; melt but do not burn. Baste meat about 30 seconds.
Chef Tips
For added convenience and less saturated fat, substitute 1 Tbsp Food You Feel Good About  Basting Oil and 1 tsp butter for shallots, thyme and butter.
