  1. Preheat oven to 350 degrees. Dust steaks with pan-searing flour; pat off excess. Heat olive oil in large ovenproof skillet on MED-HIGH until oil faintly smokes; add steaks. Turn over when steaks change color one-quarter of way up and seared side has browned, 3-4 min.
     
  2. Place skillet with steaks in oven and cook until internal temp reaches 10 degrees lower than final target temp(refer to meat cooking guide for final target temp). (Check by inserting thermometer halfway into thickest part of meat.)
     
  3. Remove steaks from oven when desired temp is reached; transfer from pan to clean platter and let rest 5-10 min.
     
  4. Transfer pan to stovetop on MED; add sauce, stirring to loosen browned bits on bottom of pan. Cook until heated through, 3-5 min. Serve sauce with sliced steaks.
