  1. Arrange shrimp into pinwheel shapes (4 per pinwheel), using foodpicks to hold together. Dust shrimp with pan-searing flour; pat off excess.
  2. Heat olive oil in pan on MED-HIGH until oil faintly smokes; add shrimp. Turn over when edges change color about one-quarter of way up, 2-3 min. Reduce heat to MED. Cook 2-4 min until internal temp reaches 120 degrees (check by inserting thermometer halfway into thickest part of shrimp).
     
  3. Add basting oil and butter; swirl. Baste with spoon, 2-3 min, until internal temp reaches 130 degrees. Transfer shrimp to clean platter; let rest at least 2 min. Spoon sauce on individual plates; top each with 1 shrimp pinwheel (remove food picks).
